Chocolate Mousse

Decadent, airy, and oh so chocolatey! I’ve been making this recipe for years now and it’s just perfect every time. It’s definitely not as simple as my other recipes but this one is so worth the extra effort , one taste, and you’ll understand why!


Ingredients:

2 cups bittersweet chocolate chips

3/4 cup coconut oil

1/2 cup strong coffee

8 eggs, separated

1 cup + 2 tablespoons sugar, divided

2 teaspoons vanilla extract


Instructions:

1. Melt the Chocolate Mixture:

In a heatproof bowl, combine chocolate, coconut oil, and coffee. Add 2 inches of boiling water to a pot and place the heatproof bowl over it, ensuring the water doesn’t touch the bowl. Stir until the chocolate is completely melted and smooth. Remove from heat and set aside.


2. Prepare the Egg Yolks:

In a mixing bowl, whisk egg yolks, 1 cup of sugar, and vanilla extract until smooth. Place the bowl over the pot of simmering water and whisk constantly until the mixture thickens and lightens in color.

Remove from heat and fold the egg yolk mixture into the melted chocolate until fully combined.


3. Beat the Egg Whites:

In a separate bowl, beat egg whites with an electric mixer until foamy. Gradually add the remaining 2 tablespoons of sugar and continue beating until stiff peaks form.


4. Combine and Chill:

Gently fold the egg whites into the chocolate mixture in three additions until smooth and airy.

Spoon the mousse into individual serving dishes or one large bowl. Cover and refrigerate for at least 4 hours or until set.
