Date & Nut Bites


Elevate your snacking with natural ingredients! While these may be healthier, it still satisfies the sweet tooth and gives you a satisfying crunch.


Yields 20-25


1½ cups Deglet Noor dates, pitted

1 cup roasted hazelnuts

½ cup roasted almonds, plus more to garnish

½ cup shelled pistachios

2 tablespoons cocoa powder

2 (3.5-oz.) bars dark chocolate

1 teaspoon coconut oil

You will also need:

1 (2-inch) ring mold


1. In a food processor fitted with the knife blade, process the dates, hazelnuts, almonds, pistachios, and cocoa powder until finely chopped.


2. Using the ring mold, press together 2 tablespoons of the date and nut mixture. Remove the mold and repeat with the remaining mixture.


3. Melt the chocolate and coconut oil in the microwave in

30-second intervals until completely smooth. Spoon 1 tablespoon chocolate over each date and nut bite and garnish with an extra almond. Transfer to the freezer for 10 minutes to set.


4. If needed, reheat the chocolate until it reaches drizzling consistency. Drizzle over the date and nut bites.
