Funfetti Cookie Bars

Nonpareils are having a moment right now, so I figured I’d share my Funfetti Cookie Bars. They’re soft, buttery, packed with colorful sprinkles, and come together with simple pantry staples. No scooping cookie dough, no chilling, just mix, bake, and slice.
Recipe
½ cup avocado oil
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
¼ teaspoon salt
¼ cup nonpareils
Preheat oven to 350°F.
In a large bowl, whisk together the oil, sugar, eggs, and vanilla extract. Add the flour, baking powder, salt, and nonpareils and mix until a soft dough forms.
Transfer the dough to a greased or parchment-lined 9x13-inch pan and press into an even layer.
Bake for 25 minutes, until lightly golden around the edges and set in the center.
Cool completely, then slice into bars.
Yield: 16–20 bars
