Embrace the warmth of Chanukah with my delicious Latke recipe —a labor of love from my kitchen to yours. Picture perfect, each latke is a golden masterpiece, crispy on the outside and tender within, bringing the authentic taste of Chanukah to your table.
Recipe:
5 large Yukon gold potatoes
1 medium onion
3 eggs
2/3 cups flour
1 1/2 teaspoon salt
1/2 teaspoon pepper
Oil for frying (avocado oil or any neutral oil )
Peel the potatoes and shred using your food processor. Place the potatoes in a net or cheese cloth or strainer and ring out as much juice as you can and discard that liquid . place your onion in the food processor using the S blade to turn it into mush . Mix the shredded potatoes, grated onion, eggs, flour, salt, and pepper. Heat up a frying pan with neutral oil and fry the latkes by using about 1/3 cup of the mix per latke. place them on a cooling rack and season with Malden salt
This recipe yields about 10-15 medium latkes
