Matzo Brie

Not everyone eats this on Passover , since it’s gebroks, a lot of families avoid it altogether. I actually had a meal by a family on Yom Tov who doesn’t eat spices on Pesach, which I had never even heard of before. It made me realize how different everyone’s Pesach traditions can be.
I’m curious what’s something your family does on Pesach that others might find surprising?
2 sheets matzo
4 large eggs
2 tablespoons butter
1/4 teaspoon salt
1/8 teaspoon black pepper
1–2 tablespoons sugar
1/4 teaspoon cinnamon
Break the matzo into small pieces and place in a bowl.
In a separate bowl, whisk the eggs
Add the eggs to the matzo add salt and pepper let it sit for about 5 minutes so everything gets nice a soft.
4. Heat a frying pan over medium heat and add the butter . Let it melt and slightly brown.
5. Add the matzo mixture to the pan. Cook, stirring and breaking it up as it cooks, until set but still soft.
6. Sprinkle with sugar and cinnamon if you like it sweet, or leave it savory. Serve warm.
