One Bowl Schnizel

Let’s go back to basics. Some of you might find this recipe silly, while others really need that exact schnitzel recipe spelled out clearly, so here goes. This is my simple one-bowl schnitzel method with easy cleanup, minimal fuss, and the kind of crispy, dependable schnitzel that everyone should know how to make.


Ingredients

2 lb chicken breast, thinly sliced cutlets

2 eggs

2 cups plain breadcrumbs

1½ teaspoons garlic powder

1½ teaspoons onion powder

1½ teaspoons salt

½ teaspoon black pepper

1 tablespoon dried parsley flakes

1 tablespoon brown sugar

Avocado oil, for frying


Instructions

  1. In a large bowl, whisk the eggs until smooth. Add the chicken and toss until every piece is fully coated.

  2. Pour the breadcrumbs directly into the same bowl. Add the garlic powder, onion powder, salt, pepper, parsley flakes, and brown sugar. Toss everything together until the crumbs are evenly seasoned and the chicken is fully coated. Press the crumbs onto each piece of schnitzel to help them adhere well.

  3. Heat a large skillet over medium-high heat and add enough avocado oil to lightly cover the bottom of the pan. Once the oil is hot, fry 2–3 pieces of schnitzel at a time, depending on the size of your pan. Do not overcrowd the skillet.

  4. Fry for 2–3 minutes per side, until golden brown and cooked through. Transfer to a cooling rack if desired—this helps keep the schnitzel crispy while allowing excess oil to drip off.

  5. Place the fried schnitzel on a baking sheet and bake uncovered at 350°F for 15 minutes. Serve hot.
