Pesach Apple Crisp

Pesach doesn’t mean skipping the dishes you enjoy—it just means making them work for the holiday. This apple crisp has everything you want: soft, cinnamony apples and that perfect crumb topping, all kosher for Pesach and gluten-free. It can either be served as a dessert or a sweet side, whichever you choose it’s so so good. Enjoy!


Ingredients

3 large Cortland apples, peeled and thinly sliced (or any apple you like)

2 cups almond flour

1/2 cup potato starch

1 egg

1/2 cup brown sugar

1/4 cup sugar

1/2 teaspoon cinnamon

1/4 cup avocado oil


Instructions


  1. Preheat oven to 350°F. Lightly grease a 9-inch round baking dish. (You can also use a 9x13—just add another apple or two.)


  1. In a large bowl, combine almond flour, potato starch, brown sugar, sugar, and cinnamon.


  1. Add the egg and avocado oil. Mix until a crumbly dough forms. Use your hands if needed to break it into crumbs.


  1. Press half of the crumb mixture into the bottom of the prepared baking dish.


  1. Evenly layer the sliced apples over the crumbs.


  1. Sprinkle the remaining crumb mixture over the apples, gently breaking it up to create that crisp topping.


  1. Bake for 40 minutes at 350°F.


  1. Lower the oven temperature to 300°F and bake for an additional 15 minutes, until golden and set.


  1. Let cool slightly before serving so the layers hold together.
