Remember those bananas you bought and didn’t end up eating and now they’re brown? Well I don’t know about you but I’ve got a bunch of those. If you'r like me, and you've got brown bananas it’s really no problemo just make these Tasty N' Simple banana choco chip muffins.
Ingredients:
3 ripe bananas
3/4 cup sugar
1 large egg
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
Optional: 1/3 cup chocolate chips
Directions:
Preheat your oven to 350°F. Line a muffin pan with paper liners or spray with nonstick spray. In a large bowl, mash the bananas with a fork until smooth. Add the sugar, egg, oil, and vanilla. Stir until well combined. Add the flour, baking soda, baking powder, salt, and cinnamon . Stir gently just until combined — do not overmix. Scoop the batter into the muffin cups, filling each about 3/4 of the way full. Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean. Let muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
