Classic Latkes

Embrace the warmth of Chanukah with my delicious Latke recipe —a labor of love from my kitchen to yours. Picture perfect, each latke is a golden masterpiece, crispy on the outside and tender within, capturing the essence of a cozy homemade celebration. Crafted with classic ingredients like grated potatoes and onions, these latkes are steeped in tradition, bringing the authentic taste of Chanukah to your table. 🕎🥔✨

Recipe:

5 large Yukon gold potatoes

1 medium onion

3 eggs

2/3 cups flour

1 1/2 teaspoon salt

1/2 teaspoon pepper

Oil for frying

Peel the potatoes and shred using your food processor. Place the potatoes in a soup net or cheese cloth and ring our as much juice as you can (it’s okay if it’s not squeezed all the way) place your onion in the food processor using the S blade to turn it into mush . Mix the shredded potatoes, grated onion, eggs, flour, salt, and pepper. Heat up a frying pan with canola or vegetable oil and fry the latkes by using about 1/3 cup of the mix per latke! (Don’t place paper towel in btwn the latkes when they’re done cooking frying, this makes them soggy. Rather place them on a cooling rack)

This recipe yields about 8-10 latkes
