Strawberry Muffins

Strawberry Muffins

You will love these muffins “berry” much! They are light and fluffy with pockets of strawberry goodness throughout. There’s no mixer necessary, keeping the prep super simple.


Yields: 16 muffins


Recipe:

2 eggs

11⁄2 cups sugar

3⁄4 cup oil

1 teaspoon vanilla extract

1 tablespoon lemon juice

1⁄2 cup soy milk

2 teaspoons baking powder

2 1⁄4 cups flour, divided

1⁄4 teaspoon salt

2 cups frozen strawberries, diced


1. Preheat oven to 375°F. In a large bowl, mix eggs, sugar, oil, vanilla, lemon juice, soy milk, and baking powder.


2. Add 2 cups flour and salt, and mix.


3. Add strawberries and remaining 1⁄4 cup flour into a small

bowl and toss to coat the strawberries.


4. Gently fold the flour-coated strawberries into the batter.


5. Line a metal muffin tin with paper muffin cups.


6. Place 1⁄4 cup of batter into each muffin cup.


7. Bake for 30 minutes.


Note: If you use disposable muffin tins, they may need to bake for five more minutes or so.
