Sweet Roasted Rainbow Carrots


Firstly, how beautiful are these rainbow carrots?! Secondly, they’re not just pretty, they taste incredible too. Lastly, they won’t last long on the serving plate.


Recipe:


1lb rainbow carrots

1 cup water

4 tablespoons dark brown sugar

3 tablespoons olive oil

1 tablespoon lime juice

¼ teaspoon ginger powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon pepper




instructions:


1. heat oven to 400


2. to a large oven safe frying pan add 1 cup water and then add the carrots, turn the flame on high and let the water boil, boil until all the water is gone from the pan


3. next add the olive oil, lime juice, and spices, cook for 5 minutes until carrots are glazed


4. next place the oven safe frying pan with the carrots to the oven and bake for 15 minutes or until fork pokes through easily
