Sweet Stuffed Chicken (capon)

Chicken cutlets are such a staple when it comes to making dinner that it’s often hard to think of them as anything special, but let me tell you this, take chicken cutlets and stuff them with your favorite flavors makes them anything but ordinary! This sweet savory chicken is stuffed with rice, orzo, sautéed onions, and crazins now that’s extraordinary!
Tip: stick a toothpick into the center of the chicken after you stuff it to hold everything in place.
Recipe:
6 dark chicken breasts with skin(capons)
2 cups cooked rice
1 cup cooked orzo
1 onion
1 teaspoon paprika
1 cup duck sauce
Handful of crazins
Salt
Heat your oven to 350°. Dice and sauté an onion. Mix the rice, orzo, onion and paprika together. Add a handful of crazins and mix. Turn the chicken so that the bottom is faced up. Take a tablespoon full of the rice mix and fill the middle of the chicken. Fold the chicken trying your best to keep the stuffing inside. Coat the bottom of a 9x13 with rice. Place all the chicken on top of the rice. Sprinkle salt and some paprika. Coat each piece with duck sauce. Bake for 1 1/2 hours at 350°. Last ten minutes uncover the chicken. If you like the top alittle crunchy you can raise the temperature for the last ten minutes to 450°.
